Yes, you could cut the heads and stalks off, tie them together in a bundle and hang it somewhere, where it's not going to be a problem, and then you can clear up any unwanted seeds that fall to the ground.
There will be no problem in my opinion by leaving them standing so birds can get the seed naturally.we have done this for at least a decade and just end up with perhaps 6 to 10 in the garden each year also if you need to pull a few up they are really easy to control.
I would agree with Sooty. Leave them standing as they are quite easy to control.
