We’re celebrating the arrival of autumn here at Pulborough Brooks and our fabulous catering manager Liz has been making the most of the abundant fruit on the reserve. She's been testing out a new recipe of apple and blackberry sponge cake and today our volunteer workparty were the lucky taste-testers. A light, moist sponge topped with blackberries and sliced apples picked only meters away from the visitor centre, this sweet treat will certainly get your taste buds tingling!
Liz is very passionate about producing as much home-cooked food in the café as possible. Since starting in her role, she has introduced vegan-friendly flapjacks, savoury pastries and chocolate marble cake to name a few, so there’s always something to suit everyone’s tastes.

Although the windfall apples are often enjoyed by butterflies, wasps, and thrushes, much of the fruit will end up simply rotting away on the ground. We are delighted to have found a way to reduce the waste and keep your sweet tooth satisfied at the same time!
