The Competition is Hotting up

 

...and so is the food! We have had some fantastic recipes submitted for the Cairngorms Futurescape Wader-friendly Recipe Competition with the overall winner being announced at the Kingussie Food on Film Food Hall Day on the 1st February with programme details at www.kingussiefoodonfilm.co.uk. We have had some fantastic entries showing the diversity of produce/ingredients we have on our doorstep. Local farming of the wet farmland provides habitat for our threstened breeding waders. We are working with farmers across thousands of hectares to support them in wader sensitive management. To highlight the link that delivering for biodiversity can have a positive effect on produce sales, Cairngorms Futurescape is co-ordinating this competition.

We can reveal the finalists are, in no particular order:

  • ·         Beef Stifado (Gillian Howarth, Kingussie)
  • ·         Highland Beef in Stout with Crusty Honeyed Parsnip and Oatmeal Dumplings (Carol Tuddenham, Inverness)
  • ·         Lamb Shanks in Red Wine (Janice Pattie)

You can try the recipes for yourself; see below. Using ingredients from local farms not only taste delicious but also supports some of the UKs threatened wildlife, our local economy, communities and landscape. Our judge will be testing these recipes as you read this – it is a tough job, but someone has to do it.
