Not sure if its going so well, there is a large amount of lard clumped somewhat together but a lot of remaining flour. I tried blending but it doesn't really seem to be doing too much. I took it out and put it in a bowl and tried to stir/use my hands but not sure if it's really working. Perhaps I should put it all back in the processor but with more water?
So I used my fingers and played with the mixture some more.
I eventually got to one giant ball looking clump. It wasn't wet and sticky but I feel like it had a bit of moisture. I figured this would be okay also if i tried to tear it apart it felt really doughy.
So I managed to get it into 8 balls of dough. Put 4 in 2 bags and left in the fridge overnight. As a pure test I'll leave it out, see if anything takes it for a week or two. If not might have to jazz it up with cheese or nuts.
Hi Edward - well done for sticking with the pastry! I am sure your birds will love it! Please let us know how it goes and what you get!

This is my setup. Put them up this morning. The usual finches and tits show 0 interest.
Don't know how to attach photos but here is a link to my setup:

Nuts and suet. Mind you, the one GSW that was visiting my garden seems to have disappeared, having recently somehow lost a lot of feathers, while seeming otherwise healthy. I hope she hasn't been predated!
Thats looks a nice garden set up for the GSWoodpecker and other birds and I'm sure it won't be long before they are tucking into the raw cheese pastry and seeds. Good luck Edward, keep us posted with more lovely photos.

They seem to quite like peanuts in a wire mesh holder too. I get them regularly here.
